– Chicken breast:  Chicken breast cube into small bite pieces.

– Yogurt: I prefer greek yogurt because it has a thicker consistency and adds a nice tangy flavor to balance out the sweetness in this dish.

– Garlic: Fresh crushed or minced garlic will work fine. I prefer to crush the garlic in this chicken recipe because it distributes more evenly throughout the dish.

– Ginger:  Fresh ginger minced or grated.

– Tomato puree:  I use canned tomato puree, but if you want you can also puree your own fresh tomatoes in a blender for this recipe.

– Garam masala:  Garam masala is an Indian spice blend. It can be found in most supermarkets or specialty stores.

– Butter:  I use salted butter, but you can also use unsalted if that’s what you have on hand.

– Onion: Finely diced onion. You can use any onion you have available to you.

– Cumin: Ground cumin gives this dish a nice earthy flavor.

– Turmeric: I use turmeric to give the dish a nice color, but it’s not essential.

– Paprika:  Paprika gives the dish a nice smoky flavor.

– Heavy cream:   Adds a richness to the dish and makes the sauce creamier.

– Fresh cilantro: Cilantro gives the dish a nice freshness.

– Salt and pepper:  As always, I prefer sea salt and freshly cracked black pepper in my dishes.

This keto butter chicken recipe has all the flavors of Indian butter chicken but with a fraction of the carbs. An easy one pan recipe that is bursting with flavor.

Ingredients

Marinade Ingredients

  • 1 lb chicken cut into cubes
  • 1 cup Greek yogurt
  • 2 garlic cloves minced
  • 2 tsp ginger minced
  • 2 tsp garam masala
  • 1 tsp sea salt
  • 1/2 tsp black crushed pepper

Sauce Ingredients

  • 1 tbsp butter
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 tsp ginger minced
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1 tsp paprika
  • 8 oz tomato puree
  • 1/4 cup heavy cream
  • 1/2 tsp salt and pepper
  • Fresh cilantro

Instructions

  1. In a large bowl whisk together the marinade ingredients, yogurt, garlic, ginger, garam masala, salt and pepper.

  2. Add the chicken cubes and coat well. Cover and refrigerate for at least 1 hour, or overnight.

  3. Heat a skillet over medium high heat and add the butter.

  4. Add the chicken and brown on all sides, should take about 7-8 minutes.

  5. Add the onion to the skillet and cook until translucent, about 5 minutes.

  6. Add the garlic, ginger, garam masala, cumin, turmeric and paprika and cook for another minute.

  7. Add the tomato puree, salt and pepper and heavy cream.

  8. Stir well and simmer for a few minutes until the sauce thickens up slightly.

  9. Top with fresh cilantro and serve hot over cauliflower rice or zucchini noodles.
