Keto Mixed Grilled Vegetables Ingredients

– Asparagus: Make sure to get the thicker spears for grilling. Cut off the woody ends and discard them.

– Cauliflower: I used 1/2 large head of cauliflower for this recipe.

– Mushrooms: You can use any type of mushroom, but button mushrooms are my favorite for grilling.

– Carrots: I like to use bigger carrots for this recipe and slice them on a lengthwise.

– Peppers: All colors work great here. Just make sure to remove the seeds and ribs from the inside of the pepper.

– Corn: Fresh or frozen corn will work great here. Cut it in smaller pieces.

– Onions: I like to use red onions, but any type of onion will work.

– Tomatoes: You can use any type of tomato here. I like to use bigger slices of tomatoes.

This Keto Mixed Grilled Vegetables is a dish that is perfect for any occasion. This keto side dish recipe is simple, but it will impress your guests.

Ingredients

  • 12 asparagus spears
  • 1/2 cauliflower
  • 6 mushrooms
  • 2 carrots sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 ear of corn sliced
  • 2 onions sliced
  • 3 small tomatoes cut in halves
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium high heat.

  2. Add all of the vegetables to a large bowl.

  3. Drizzle olive oil over the veggies and season with garlic powder, salt and pepper.

  4. Toss to coat evenly.

  5. Spray your grill pan with cooking spray or brush with oil.

  6. Add the vegetables to the grill cook for 3-5 minutes per side, or until they are slightly charred and cooked through.

  7. Enjoy!
