– Almond flour: Blanched almond flour is much finer than almond meal, which is made from unblanched almonds. I highly recommend almond flour as it can be used in baking as well as cooking for thickening sauces and soups.

– Butter: Unsalted butter is best to use when baking.

– Keto sugar: I am using monk fruit sugar, because it has 0 calories and no glycemic impact.

– Cocoa powder: I recommend unsweetened cocoa powder for most of my baking recipes.

– Food coloring: For this recipe, I recommend red food coloring.

– Vanilla extract: Vanilla extract gives these cupcakes such a great flavor! If you don’t have any ready-made on hand, using vanilla beans will work just as well. Just split the pod open and use the seeds scraped from inside for this recipe.

– Baking powder: Baking powder is used to aerate the cupcakes, making them nice and fluffy.

– Eggs: I use large eggs in my recipes. Make sure they are at room temperature for best results.

– Heavy cream: Full fat heavy cream is the best for this recipe.

– Salt: Salt is vital in any type of baking, as it brings out flavors and balances other ingredients.

Low Carb Valentine Cupcakes Recipe

These low carb valentine cupcakes recipe is very quick, easy and delicious! They taste just as good as the classic red velvet cupcakes!

Ingredients

For the Cupcakes

  • 2 cups almond flour
  • 1/2 cup unsalted butter melted
  • 2 tsp baking powder
  • 1/4 tsp sea salt
  • 1/4 cup monk fruit
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp red food coloring
  • 1 tsp vanilla extract
  • 3 eggs

For the Frosting

  • ¼ cup unsalted butter softened
  • 2 cups powdered monk fruit sweetener
  • 1 tsp vanilla extract
  • 8 oz heavy cream

Instructions

For the Cupcakes

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. In a large bowl combine almond flour, sea salt, baking powder and cocoa powder.

  3. In a separate small bowl whisk together melted butter, eggs, red food coloring, vanilla extract and monk fruit sweetener until fully combined.

  4. Add the butter mixture to the flour mixture and whisk together until smooth.

  5. Evenly divide the batter between cupcake liners, about ¾ full.

  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

  7. Allow to cool fully before frosting.


For the Frosting:

  1. Using a stand mixer or hand held mixer, beat the butter and sugar until whipped and turn a pale yellow color about 5minutes.

  2. Add heavy whipping cream and vanilla extract and beat until stiff peaks have formed.

  3. Pipe onto cooled cupcakes and top with heart sprinkles if desired!

  4. Enjoy!
