No Bake Keto Cheesecake Ingredients

Ingredients for the Crust

– Almond flour: The crust should be made of blanched almond flour. Don’t use finely ground almond meal because it has an uneven texture.

– Butter: Unsalted butter is best in this recipe.

– Vanilla: Vanilla extract or vanilla powder.

– Cinnamon:  Cinnamon will give it an extra kick and more depth and flavor complexity.

– Salt:  I like to use sea salt or Himalayan pink salt, but any salt is fine.

Ingredients for the Filling

– Cream cheese: Make sure you use block cream cheese, don’t use spreadable packages. Make sure that the cream cheese is softened.

– Sugar: Erythritol or monk fruit keto-approved sweeteners. These low-carb sweeteners are great because they don’t affect your blood sugar levels.

– Heavy cream: Any brand of heavy cream is ok to use as long as is full fat and NOT the lite version.

– Vanilla:  Vanilla extract or vanilla powder.

– Salt: Salt enhances flavors, don’t skip it.

– Lemon: For this low carb cheesecake recipe I use lemon for its juice and also the zest.

No Bake Keto Cheesecake Recipe

Total Time: 3 hours 10 minutes

This no bake keto cheesecake is filled with creamy, luscious cheesecake. It only takes 10 minutes to make plus chilling time. This is the best cheesecake ever!

Ingredients

Ingredients for the Crust

  • 1 cup almond flour
  • 2 tbsp vanilla
  • 2 tbsp butter
  • 1 tsp cinnamon
  • Pinch of salt

Ingredients for the Filling

  • 4 8-ounce blocks cream cheese
  • 3/4 cup erythritol
  • 3/4 cup heavy whipping cream
  • 1 tsp vanilla zest of one lemon
  • 4 tbsp. lemon juice

Instructions

Preparation for the Crust

  1. Combine all ingredients for the crust in a bowl and mix well.

  2. Spread the mixture evenly in an 8" round baking pan lined with parchment paper (make sure you oil the bottom of the pan before lining it with parchment).

  3. Place in the refrigerator and let it chill while you are working on the filling.

Preparation for the Filling

  1. Mix cream cheese and sugar with a mixer for 5-8 minutes.

  2. Add lemon zest, salt, vanilla and mix well.

  3. Separately whisk together the whipping cream and the lemon juice until softly peaks.

  4. Pour into the cream cheese mixture and mix until fully incorporated.

  5. Distribute evenly on top of the baked crust and let chill in the fridge for a few hours.

  6. Serve topped with berries

  7. Enjoy!
