Ingredients
- 1 1/2 lb of chicken breast
- 2 cups crushed pork rinds
- 1/2 cup grated parmesan cheese
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 3/4 cup buffalo wing sauce
- 2 tbsp butter
- 1/4 cup avocado oil
Instructions
- Cut the chicken breast into bite-size pieces.
- In a small bowl mix together the pork rinds, parmesan cheese, salt and garlic powder.
- Place a few pieces of chicken into a bag a shake to coat with the pork rind mixture.
- In a large saucepan, add the buffalo wing sauce and butter, cook on medium heat just until it starts to bubble.
- Heat avocado oil in a large skillet over medium-high heat.
- Fry the chicken in batches until golden and crispy.
- Add the cooked chicken to the saucepan and toss until coated.
- Serve with ranch or blue cheese dressing!
