Slow Cooker Zoodles with Meat Sauce

This slow cooker zoodles with meat sauce is a low carb, paleo recipe that can be made with out any fuss.

This low carb bolognese sauce is so rich and hearty, I could eat it with a spoon. 

It’s the kind of meal that keeps you full for hours while at the same time refreshing your taste buds.

Slow Cooker Zoodles with Meat Sauce Ingredients

– Ground beef: I like to use 80% ground meat. Ground chuck is just fine. 

– Zucchini: You can buy the zucchinis and make them into noodles with a spiralizer , or simply use pre-made zucchini noodles that you can purchase at your local supermarket.

– Onion: You can use white or yellow onion, but for this recipe I like to use a sweet onion like Vidalia or any other type of onions with sweeter flesh.

– Garlic: I prefer to mince my own garlic as opposed to using jarred minced garlic because I think it has a better flavor. You can also use garlic powder. 

– Crushed tomato: I use a medium can of crushed tomatoes in this recipe.

– Italian seasoning: I just use a basic Italian seasoning mix that I bought at the grocery store.

– Salt & Pepper: You can add salt and pepper to taste if desired.

Slow Cooker Zoodles With Meat Sauce Recipe

Prep Time: 20 minutes
Cook Time: 2 hours
Total Time: 2 hours 20 minutes

This slow cooker zoodles with meat sauce is a low carb, paleo recipe that can be made with out any fuss. All you need is a slow cooker, an instant pot or crockpot

Ingredients

  • 4 zucchini zoodled
  • 1 lb ground meat
  • 1 onion diced
  • 28 ounces diced tomatoes
  • 1 tbsp Italian seasoning
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

Slow Cooker Instructions:

  1. Add all ingredients to slow cooker except zoodles.

  2. Stir until combined.

  3. Cook on high for 1-2 hours or low for 3-4 hours.

  4. Add zoodles and cook an additional 10 minutes.

  5. Serve with Parmesan or fresh basil if desired.


Instant Pot Instructions:

  1. Set Instant Pot to saute, add oil and meat. Cook until browned then drain fat.

  2. Mix in tomatoes, seasoning, garlic, salt, pepper.

  3. Close lid and turn vent to sealed position.

  4. Set Instant Pot to high pressure for 8 minute.

  5. Once finished quick release and add zoodles.

  6. Close lid and set Instant Pot to saute for an additional 3-5 minutes or until zoodles reach desired tenderness.

  7. Serve with Parmesan or fresh basil if desired.
