Keto Ground Beef Enchiladas Ingredients

– Tortillas: I used low carb tortillas for this recipe. You can find them at most grocery stores in the dietary aisle.

– Ground beef: I used ground beef that was 85% fat. You can use any ground beef that you like.

– Enchilada sauce: I used a store bought enchilada sauce, but you can make your own if you prefer.

– Cheddar cheese: I used cheddar cheese, but you could use any cheese that you like for example pepper jack for a bit of a kick.

– Green chilies: I used canned green chilies. You can find them in the international aisle of most grocery stores.

– Onion: I used a white onion, but you could use any onion that you like.

– Spices: I used chili powder, cumin, garlic powder, salt and pepper to flavor the ground beef.

– Sour cream: I used sour cream to top the enchiladas, but you could also use plain yogurt.

How To Make Keto Ground Beef Enchiladas

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a large skillet, cook the ground beef over medium heat until it is browned.
  3. Drain the fat from the ground beef and add the spices. Stir until the spices are evenly mixed in.
  4. Add the enchilada sauce and green chilies and stir until everything is evenly mixed.
  5. Lay the tortillas and divide the ground beef mixture evenly among the tortillas.
  6. Add cheese and roll them up and place them in a baking dish.
  7. Cover the enchiladas with cheddar cheese.
  8. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Serve immediately and enjoy!
