This dish is perfect for a weeknight meal or to entertain guests.

The clean up is super easy since this is a one pot meal that is cooked in a baking dish.

Ingredients For Keto Ground Beef Enchiladas without Tortillas

– Egg wraps:  I use a 0g net carb egg wraps from Costco. They are so good and last a long time in the fridge if you want to buy extras.

– Ground beef: I used ground beef that was 85% fat. You can use any ground beef that you like.

– Enchilada sauce: I used a store bought enchilada sauce, but you can make your own if you prefer.

– Cheddar cheese: I used cheddar cheese, but you could use any cheese that you like for example pepper jack for a bit of a kick.

– Green chilies: I used canned green chilies. You can find them in the international aisle of most grocery stores.

– Onion: I used a white onion, but you could use any onion that you like.

– Spices: I used chili powder, cumin, garlic powder, salt and pepper to flavor the ground beef.

– Sour cream: I used sour cream to top the enchiladas, but you could also use plain yogurt.

How To Make Keto Ground Beef Enchiladas without Tortillas

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a large skillet over medium heat, cook the ground beef until it is browned.
  3. Add the onion and spices to the ground beef and cook for a few more minutes until the onion is softened.
  4. Stir in the canned green chilies and enchilada sauce.
  5. Cook for a few more minutes until the sauce is heated through.
  6. To assemble the enchiladas, place an egg wrap on a plate and spoon some of the ground beef mixture onto the center of the wrap.
  7. Roll up the egg wrap and place it seam side down in a baking dish.
  8. Repeat with the remaining egg wraps and ground beef mixture.
  9. Sprinkle the top of the enchiladas with cheddar cheese.
  10. Bake in the oven for 10-15 minutes until the cheese is melted and bubbly.
  11. Serve with sour cream and enjoy!

Notes

You can freeze the enchiladas for up to 3 months. When you are ready to eat them, thaw them in the fridge overnight and then bake them in the oven at 375 degrees Fahrenheit for 15-20 minutes, or until they are heated through.

  • 4 egg wraps
  • 1/2 cup onion, diced
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1.5 cup enchilada sauce, divided
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/4 cup canned green chilies, diced
  • Sour cream, for serving

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.

  2. In a large skillet over medium heat, cook ground beef until browned.

  3. Add onion and spices to the ground beef and cook for a few more minutes until onion is softened.

  4. Stir in canned green chilies and 1 cup enchilada sauce. Cook for a few more minutes until sauce is heated through.

  5. To assemble enchiladas, place an egg wrap on a plate and spoon some of the ground beef mixture onto the center of the wrap.
