– Egg yolks: Eggs at rooms temperature. Separate the yolks from the egg whites.

– Heavy cream: Use full-fat heavy cream for best results.

– Coconut milk: You can also use almond milk, but coconut milk will make it richer and creamier.

– Sugar free sweetener: I used monk fruit sweetener, but you could also use stevia or any other sugar free sweetener.

– Rum: I like to use a good quality dark rum, but you could also use bourbon, brandy or your favorite spirit.

How To Make Low Carb Eggnog Cocktail

  1. In a large bowl, whisk together the egg yolks and sugar free sweetener until creamy.
  2. In a medium saucepan, heat the heavy cream and coconut milk over medium heat until steaming.
  3. Slowly pour the hot cream into the egg mixture, whisking constantly.
  4. Pour the mixture back into the saucepan and cook over low heat until thickened.
  5. Remove from heat and stir in the nutmeg, cinnamon, vanilla extract and rum.
  6. Pour into glasses and enjoy!

Notes:

– This eggnog will thicken as it chills, so if you prefer a thinner consistency, simply add more heavy cream before serving.

– For a boozy version, feel free to add your favorite spirit. Rum, whiskey and brandy are all great choices.

  • 5 egg yolks
  • 1 cup heavy cream
  • 3 cup coconut milk
  • 1/4 cup monk fruit
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1 tsp vanilla extract
  • 4 oz rum

Instructions

  1. In a large bowl, whisk together the egg yolks and sugar until the mixture is pale yellow.

  2. In a medium saucepan, heat the heavy cream and coconut milk over medium heat until steaming.

  3. Slowly pour the hot mixture into the bowl with the egg yolks, whisking constantly to prevent the eggs from cooking.

  4. Stir in the nutmeg, cinnamon, and vanilla extract.
