– Chicken thighs: Get chicken thighs with bone and skin on. You can use boneless and skinless if you prefer, but the meat will not be as juicy.
– Garlic : I like to use fresh garlic, but garlic powder is fine too.
– Onion powder: Onion powder is dehydrated garlic flakes. It’s a wonderful way to add flavor without having to chop or crush fresh Onion.
– Balsamic vinegar: Use a low sugar balsamic vinegar. We are trying to keep the carbs down, not add excess sugar.
– Italian seasoning: Italian seasoning a good herb blend to use in this crockpot chicken dish.
– Salt and pepper: Freshly ground salt and pepper.

Low Carb Slow Cooker Balsamic Chicken Recipe
This low carb slow cooker balsamic chicken is a sweet and tangy dish that can be served over salad, cauliflower rice, or zoodles.
Ingredients
- 8 chicken thighs
- 2 medium garlic cloves minced
- 1/2 tsp onion powder
- 1/2 tsp Italian seasoning
- 1/4 cup balsamic vinegar
- 1/2 cup diced tomatoes
- 2 tbsp olive oil
- 1 tsp kosher salt
Instructions
For Slow Cooker
- In a small bowl, mix together garlic, onion powder, italian seasing, balsamic vinegar, diced tomatoes, olive oil, salt and pepper.
- Place chicken thighs in a slow cooker.
- Pour the mixture over the top of the chicken thighs.
- Cook on low for 4-6 hours or on high for 2-3 hours.
For Stove Top
- In a deep sided skillet, add olive oil.
- Place on medium high heat until oil shimmers.
- Mix together garlic, onion powder, italian seasoning, balsamic vinegar, diced tomatoes, salt and pepper in a small bowl. Set aside.
- Now place chicken thighs in hot oil and brown for about 1 minute.
- Flip over and brown other side for about 1 minute.
- Add the sauce mixture to the pan, turning chicken thighs to coat evenly.
- Reduce heat to low cover and simmer for 20 minutes.
- Remove from pan and serve with your favorite side dish.
