Keto Pasta Salad Ingredients

– Keto pasta: I use keto pasta colored Farfalle pasta I get at my local grocery store. It taste and cooks just like regular pasta. If you can’t find it, you could also use zucchini noodles or shirataki noodles

– Cherry tomatoes: I like to use cherry tomatoes because they’re small and sweet. You may use grape tomatoes or any other type of tomato you like.

– Basil: Fresh basil is a must in this recipe! If you don’t have fresh basil, you could use dried basil or oregano.

– Mozzarella cheese: I like to use mozzarella balls because they’re easy to eat and they add a nice touch of creaminess to the salad. You could also use shredded mozzarella cheese.

– Olive oil: I like to use a good quality olive oil in this recipe. You could also use avocado oil or any other type of vegetable oil.

– Vinegar: I like to use white vinegar or apple cider vinegar in this recipe.

– Salt and pepper: To taste. I use sea salt and freshly ground black pepper.

How To Make Keto Pasta Salad

  1. Cook the pasta according to the package instructions.
  2. Drain and rinse with cold water.
  3. In a bowl make the dressing by whisking together olive oil, vinegar, salt, and pepper.
  4. Add the pasta, tomatoes, mozzarella cheese, and basil.
  5. Toss to combine.
  6. Serve immediately or store in the fridge for later.

Notes

– This salad is best served cold or at room temperature.

– It can be made ahead of time and stored in the fridge for up to 3 days.

If you’re looking for a heartier salad, you could add grilled shrimp or grilled chicken.

This salad is also great with a sprinkle of Parmesan cheese on top.

  • 1 pint cherry tomatoes, halved
  • 1/2 cup mozzarella balls
  • 1/4 cup chopped basil
  • 1/4 cup olive oil
  • 2 tablespoons vinegar
  • Salt and pepper, to taste

Instructions

  1. Cook pasta according to package instructions.

  2. Drain and rinse with cold water.

  3. In a large bowl, mix together olive oil, vinegar, salt and pepper.

  4. Add pasta, tomatoes, mozzarella and basil.

  5. Toss to combine.
