– Cabbage: I used green cabbage for this recipe, but you could also use napa cabbage or even savoy cabbage.

– Garlic: I always use fresh garlic in my recipes, but you could also use garlic powder.

– Beef broth: I like to use beef broth for this recipe, but you could also use chicken broth or vegetable broth.

– Tomatoes: I used diced tomatoes, but you could also use crushed tomatoes. If all you have is tomato paste that can be use as well.

– Bell peppers: I like to use red and orange bell peppers for color contrast, but you could use any color of bell pepper.

– Oregano: I used dried oregano, but you could also use fresh oregano.

– Butter: I used salted butter, but you could also use ghee or coconut oil.

– Salt and pepper: Season to taste.

How To Make Keto Crockpot Cabbage Soup

  1. Start by adding the cabbage, garlic, beef broth, tomatoes, bell peppers, oregano, salt and pepper to your crockpot.
  2. Stir everything together until well combined. 
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the cabbage is cooked to your liking. 
  4. If you want your soup to be thinner, you can add additional beef broth or water. 
  5. To thicken the soup, you can remove the lid and cook on high for the last hour.

  • 32 oz. beef broth
  • 14.5 oz. diced tomatoes
  • 1 red bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 2 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a crockpot, combine all of the ingredients.

  2. Stir well and set the crockpot to low.
